The physical principle on which the machine is based is that “the lower the pressure, the lower the temperature necessary to bring a liquid to the boil (and therefore evaporation)”. Once the vacuum has been created, the hot coil of a heat pump placed in the lower tank, heats the liquid and generates evaporation; the cold coil of the same heat pump condenses the vapors in the vertical cylinder, which are collected and separated.

The condensing heat exchanger placed in the turret is more compact than the versions made with bundles of smooth tubes, that results in more compact machines.
The large flat and vertical surface maximizes the condensation of vapors and facilitates their extraction.
